Well another Christmas has come and gone...it was a wonderful evening with all of the family...here is my most requested recipe, and a few pictures too.....

Yummy Amazing Crackers….

So, this is not my original recipe, but I did make a few tweaks to it, and I think there are more ways to adjust and adapt it as you like….


1 box of saltine crackers. (could be salt free if you are watching your salt intake..)

1 package of ranch dressing (or Dip) mix (Hidden Valley Ranch has MSG, arrgg. Mc Cormick does not, yay!)

1 1/4 cup vegetable oil, canola etc.

2 teaspoons garlic powder

2 Tablespoons chili flakes- or more or less depending on your liking for the spicy.


Pre heat oven to 250 degrees.

You’ll need two cookie sheets, line with foil for easy cleanup, and if your cookie sheets are rimless, bend the foil up on the edges to keep any oil from dripping.

Place all the crackers in a big bowl, (or two if your bowls are smaller). Mix the spices and ranch mix into the oil. Pour the oil over the crackers, and mix with your hands for a few minutes. Try to mix from the bottom to get each cracker coated. Pour the crackers onto the cookie sheets and any left over oil can be drizzled over.

Put in the oven for 20-30 minutes, stirring at about half way through.                                                                                                                                  

Remove from oven and allow to cool to room temp. Put them in a big baggy and take to the party. Resist keeping them in the front seat on the way, or there will not be any for your family.

Alterations and additions.  I haven’t tried all of these, but they might be fun…..
Use oyster crackers instead of saltines.

Sprinkle with Parmesan when they come out of the oven, it should be hot enough to get it to stick without melting all the way. Will try this for NYE and let you all know how it goes.

Change up the spices, dill, onion powder, oregano, rosemary and lemon pepper…maybe we should have a taste test……

 Lisa and James are taking Uncle Butch on a fishing trip to the Trinity next month, they will float fish with a guide for a day then explore another river close by, Uncle Butch was so surprised!

Welcome to Christmas Eve at Peg and Ricks

Hi all,
If you've made it here you've been to Peg and Rick's house on Christmas Eve! There is a huge tree with about a million lights, Santa's coming, there are songs to be sung, ornaments to be swapped and lots of great things to eat.
I've always wanted a family cookbook of all our favorite recipes, there are so many awesome cooks in our family and extended family!  So without further ado, here are the recipes I've collected, and I'm sure there are many more to come.
If you have a recipe and want to share, email to me either as a .jpg file or a pdf. You can simply take a picture of it with your phone and send it off...
